The term Programming refers to how by understanding a new perspective and adding a range of linguistic patterns to our system, we can choose to change our existing responses to the same situation differently, usually for the better. Programming is all about how to play with our system to tune it to excellence in all times by observing our own or others patterns of excellence and to be able to reproduce it consistently. For example, by watching sachin tendulkar play legside ball again and again, a young aspiring cricketer may learn to play like him during his game.
By understanding a perspective from an expert(model) and by learning to act the way he does in a given situation, we can learn to get similar results like the expert. This process we say is modeling and is the essence of NLP.
